Description
Creamy chia seed pudding made with coconut milk and topped with fresh mango. Mix, refrigerate overnight.

MIX PUDDING BASE
In a bowl, whisk chia seeds, coconut milk, maple syrup and vanilla until combined. Let sit for 10 minutes, then whisk again.
Tip: Use full-fat coconut milk for creaminess.

PREPARE MANGO
Peel and dice the mango into small cubes. Store separately in the container.
Tip: Choose slightly firm mango for better texture.

DIVIDE AND CHILL
Pour the mixture into 4 jars. Cover and refrigerate at least 4 hours (overnight preferred).
Tip: Stir after 1 hour to prevent clumping.

ADD TOPPINGS
When ready to serve, top each jar with mango cubes and optional coconut flakes.
Tip: Add toppings just before eating.

Fridge: 5 days.
Freezer: Not recommended.
Stir if separation occurs.
