Hearty breakfast burritos packed with eggs, beans and cheese. Cook the fillings, wrap in tortillas, then freeze for quick reheating.

  1. COOK VEGETABLES

    Dice pepper and onion. Heat oil in skillet over medium. Sauté vegetables for 5 minutes until soft.

    Tip: Cook veggies until no liquid remains.
  1. ADD BEANS AND SEASONING

    Drain and rinse beans. Add to skillet with cumin. Cook 3 minutes, mashing slightly.

    Tip: Reserve some whole beans for texture.
  1. SCRAMBLE EGGS

    In a bowl, whisk eggs with salt/pepper. Pour into skillet. Cook, stirring, until just set.

    Tip: Remove from heat while slightly moist.
  1. ASSEMBLE BURRITOS

    Warm tortillas. Divide fillings among tortillas. Add cheese and salsa. Fold sides, then roll tightly.
