PREPARE LETTUCE CUPS
Wash and carefully separate lettuce leaves. Pat dry and store in an airtight container lined with paper towels.
Tip: Choose large, sturdy lettuce leaves for easier wrapping.

COOK CHICKEN FILLING
Heat sesame oil in a large skillet over medium-high heat. Add garlic and ginger and cook for 30 seconds until fragrant. Add chicken and cook until no longer pink, breaking into small pieces.
Tip: Drain excess liquid if needed.

ADD VEGETABLES AND SAUCE
Stir in mushrooms, water chestnuts and white parts of green onions. Cook for 5 minutes. Add soy sauce, rice vinegar and hoisin sauce. Cook for 2 more minutes.
