Description

This golden-hued vegan stew simmers mixed mushrooms in aromatic coconut broth infused with lemongrass, kaffir lime and fresh turmeric. A dairy-free comfort dish ready in 40 minutes.

  1. PREPARE THE AROMATICS

    • Bruise lemongrass: Cut off the woody tops, remove the outer layer, and smash with a knife handle to release the oils.                           
    • Sauté base: Heat coconut oil in a Dutch oven over medium heat. Add shallot, garlic, lemongrass, ginger and turmeric. Sauté 3 minutes until fragrant.
  1. COOK MUSHROOMS

    Brown mushrooms: Add sliced mushrooms and red bell pepper. Cook for 8-10 minutes, until the mushrooms release their moisture and brown slightly.

  1. SIMMER STEW

    • Add liquids: Pour in coconut milk, vegetable broth, soy sauce, maple syrup and kaffir lime leaf (if using). Stir well. 
    • Simmer: Reduce heat to low, cover and simmer for 15 minutes to meld flavors.
  1. FINISH AND SERVE

    • Adjust seasoning: Remove lemongrass and lime leaf. Stir in lime juice, salt, and pepper. Taste and add more lime or salt if needed.     
    • Garnish: Top with cilantro and Thai basil. Serve with lime wedges and jasmine rice.
  1. STORAGE

    • Fridge: Keeps for 4 days. Flavors intensify overnight.

    • Freezer: Store in airtight containers for up to 2 months.

    • Reheat: Gently warm on the stove with a splash of broth to refresh consistency.

  1. ✔ For deeper flavor: Toast 1 tsp coriander seeds and ½ tsp cumin seeds, grind and add with turmeric.
