- Bruise lemongrass: Cut off the woody tops, remove the outer layer, and smash with a knife handle to release the oils.
- Sauté base: Heat coconut oil in a Dutch oven over medium heat. Add shallot, garlic, lemongrass, ginger and turmeric. Sauté 3 minutes until fragrant.

Brown mushrooms: Add sliced mushrooms and red bell pepper. Cook for 8-10 minutes, until the mushrooms release their moisture and brown slightly.
