PREPARE PEPPERS
Cut the tops off the peppers and remove seeds. Parboil in boiling water for 3 minutes. Drain upside down.
Tip: Choose peppers that stand upright.

COOK RICE
Sauté onion and garlic in 1 tbsp oil until soft. Add rice, tomatoes, herbs and 2 cups water. Simmer (covered) for 15 minutes.
Tip: Use vegetable broth for more flavor.

MAKE FILLING
Mix cooked rice with feta, parsley, dill, remaining oil, salt and pepper.
Tip: Let filling cool slightly before stuffing.

BAKE PEPPERS
Fill peppers with rice mixture. Place in a baking dish. Cover with foil and bake at 375°F (190°C) for 30 minutes. Uncover, bake 15 more minutes.
Tip: Add water to baking dish to prevent burning.

STORE AND REHEAT
Cool completely before storing.
Fridge: 5 days. Freezer: 3 months.
Reheat covered at 350°F for 20 minutes.Tip: Top with extra feta when serving.
