Description

Stuffed peppers combine rice, herbs, tomatoes and feta in colorful bell peppers. Cook rice, mix filling, stuff peppers and bake.

  1. PREPARE PEPPERS

    Cut the tops off the peppers and remove seeds. Parboil in boiling water for 3 minutes. Drain upside down.

    Tip: Choose peppers that stand upright.
  1. COOK RICE

    Sauté onion and garlic in 1 tbsp oil until soft. Add rice, tomatoes, herbs and 2 cups water. Simmer (covered) for 15 minutes.

    Tip: Use vegetable broth for more flavor.
  1. MAKE FILLING

    Mix cooked rice with feta, parsley, dill, remaining oil, salt and pepper.

    Tip: Let filling cool slightly before stuffing.
  1. BAKE PEPPERS

    Fill peppers with rice mixture. Place in a baking dish. Cover with foil and bake at 375°F (190°C) for 30 minutes. Uncover, bake 15 more minutes.

    Tip: Add water to baking dish to prevent burning.
  1. STORE AND REHEAT

    Cool completely before storing.
    Fridge: 5 days. Freezer: 3 months.
    Reheat covered at 350°F for 20 minutes.

    Tip: Top with extra feta when serving.
