PREPARE THE CHICKEN

Mix soy sauce, lime juice, honey, garlic, ginger and red pepper flakes in a bowl.

Add chicken thighs, ensuring they’re fully coated. Marinate for at least 15 minutes (or overnight for deeper flavor).

Heat a grill pan over medium-high heat. Cook chicken for 5-6 minutes per side until fully cooked (internal temp 165°F/74°C).

Let rest for 5 minutes before slicing.
Tip: For extra char, grill on high heat for 2 minutes. -

MAKE THE PEANUT SAUCE

In a small bowl, whisk peanut butter, soy sauce, lime juice, honey and sriracha.

Gradually add water until the sauce reaches a drizzleable consistency.
Tip: If too thick, microwave for 10 seconds to soften. -

ASSEMBLE THE BOWLS

Divide cooked rice among 4 meal prep containers.

Top with sliced chicken, bell pepper, cucumber and shredded carrot.
