Instructions

  1. PREPARE THE CHICKEN

    1. Mix soy sauce, lime juice, honey, garlic, ginger and red pepper flakes in a bowl.

    2. Add chicken thighs, ensuring they’re fully coated. Marinate for at least 15 minutes (or overnight for deeper flavor).

    3. Heat a grill pan over medium-high heat. Cook chicken for 5-6 minutes per side until fully cooked (internal temp 165°F/74°C).

    4. Let rest for 5 minutes before slicing.

    Tip: For extra char, grill on high heat for 2 minutes.
  1. MAKE THE PEANUT SAUCE

    1. In a small bowl, whisk peanut butter, soy sauce, lime juice, honey and sriracha.

    2. Gradually add water until the sauce reaches a drizzleable consistency.

    Tip: If too thick, microwave for 10 seconds to soften.
  1. ASSEMBLE THE BOWLS

    1. Divide cooked rice among 4 meal prep containers.

    2. Top with sliced chicken, bell pepper, cucumber and shredded carrot.

    3. Drizzle with peanut sauce and garnish with cilantro and crushed peanuts.
