  1. PREHEAT and PREP

    Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or line with silicone liners.

  1. PREPARE VEGETABLES

    Wash and dry all vegetables. Finely chop spinach, dice bell pepper into 1/4-inch pieces and mince onion. Set aside.

  1. MAKE EGG MIXTURE

    In a large mixing bowl, whisk eggs and milk until fully combined and slightly frothy. Add salt, pepper and garlic powder. Whisk again to incorporate.

  1. ADD INGREDIENTS

    Stir in shredded cheese, chopped spinach, diced bell pepper and onion. Mix until evenly distributed throughout the egg mixture.

  1. FILL MUFFIN CUPS

    Pour egg mixture evenly into prepared muffin cups, filling each about 3/4 full. Add optional meat if using.

  1. BAKE MUFFINS
