  1. PREPARE QUINOA

    Rinse quinoa thoroughly. Cook with 2 cups of water and a pinch of salt for 15 minutes. Fluff with a fork.

    Tip: Add lemon zest to cooking water for extra flavor.
  1. ROAST ASPARAGUS

    Preheat oven to 425°F(220°C). Toss asparagus with 1 tbsp oil, salt and pepper. Roast 12-15 minutes.

    Tip: Snap woody ends off asparagus naturally.
  1. COOK SHRIMP

    Heat 1 tbsp oil in a skillet. Add garlic, cook for 30 seconds. Add shrimp, paprika, salt and pepper. Cook 2-3 minutes per side. Finish with lemon juice.
